Crumbed Chicken

Ingredients:

• 2 chicken breasts (about 100gram each)
• 1 tbls quinoa flour
• 4 tbls almond meal
• 1 egg
• A little almond milk
• Pepper
• ¼ cauliflower grated
• 4 shallots
• 1 clove garlic
• Oilve oil spray

Method:

1. Whisk the egg, milk and pepper in a bowl
2. Use 2 plate. Spread one with the quinoa flour and one with almond meal
3. Cover the chicken first in the flour, then in the egg then in the almond meal
4. Cook the chicken on medium heat until it is cooked through
5. Whilst the chicken is cooking sauté the grated cauliflower, garlic and shallots until golden
6. Serve the chicken on a plate with the cauliflower rice
